A dry wine vinified without added sulphites. It is aged on lees for 9 months, part of which is in demi-muid (500L barrels). Its aging brings structure, finesse and complexity.
It accompanies the most refined dishes, and is perfect with oysters, fish, shellfish, seafood, and of course sauerkraut. It will go wonderfully with a salad of grapefruit, shrimp, avocado, dill.
